By itself, this plum liqueur is THE perfect accompaniment to a mince pie, but it also has several uses for the cocktail lover. Use instead of sweet vermouth in Manhattans for a fruity, full-bodied and slightly sweet drink. Made by Akashi-Tai the traditional way by preserving plums in the finest of Japanese sakes, is uses premium ginjo sake made from Yamada Nishiki rice. The mild flavour of the brewed sake is blended harmoniously with the fruity flavour of ume plums, which have been marinated for six months and then left to age another two years. The result is a deliciously rich and plummy liqueur that can be served over ice on its own.
